Whiskey butterscotch sauce
Makes about 2 cups (500ml).
This recipe can be made two days ahead. Not suitable to freeze. Suitable to microwave.
1 cup (200g) firmly packed brown sugar
125g butter, chopped
Â¼ cup (60ml) Irish whiskey
1.Combine the sugar, cream and butter in a medium saucepan; stir over a medium heat until the butter is melted.
2.Bring to the boil, then simmer, uncovered, without stirring, until the mixture thickens slightly. Stir in whiskey.
